GRAZIA: What is your overall experience working with world-renowned chef, Gastón Acurio?

Chef Cesar Ulloa: “Working for Gastón Acurio worldwide has been a bountiful adventure. Over the years I have experienced unique opportunities in both my professional career and personal life. I’ve been traveling all around the world expanding Peruvian gastronomy, and I like to think that I have become an ambassador of Peru, creating awareness for our delectable cuisine. I have relished every moment of working with Gastón Acurio, it’s simply been amazing. Since I began my journey at La Mar, I have learnt so much – and what drives me is that the learning never stops.”

GRAZIA: How do you think La Mar differentiates from other Peruvian restaurants in Dubai?

Chef Cesar Ulloa: “At La Mar Dubai we try to elevate Peruvian cuisine through creative gastronomy, nicely mixing traditional flavours with unique plates. La Mar Dubai’s menu features exclusive dishes that have been crafted especially for this restaurant at Atlantis The Royal with the Dubai market and clientele in mind. These nicely complement the items typically found in La Mar restaurants all around the world. Something that makes La Mar more special and unique is that we use fresh ingredients that we get directly from Peru, combined with the best fish, vegetables, and meats. Through our food, we create a memorable experience for those that visit us – through our flavours we transport people to Peru without having to leave their seats.”

GRAZIA: What do you believe is the future of Peruvian food in the international culinary scene?

Chef Cesar Ulloa: “I think with the work done by Gastón and a lot of chefs from Peru, has firmly established Peruvian culinary as a notable cuisine which is now recognised around the world. I believe that this is going to continue growing. There are many more restaurants putting cebiche on the menu, which is fantastic, but it would be great to see a variety of Peruvian dishes showcased such as the anticuchos, which is the Peruvian version of a Japanese Yakitori. There is a lot more to our flavoursome cuisine and I am excited to see it grow and grow.”
