Being painfully honest, I started my day with a Ferrero Rocher and three cups of coffee, followed by a can of low-sodium chicken noodle soup and a second Ferrero Rocher for lunch. My inadvisable dietary regimen is inconveniently timed with the new year—when millions of hopeful Americans set the intention of eating better, drinking more water, and exercising daily. I, too, was one of those people to set that goal a few drinks in on December 31, and clearly, I have work to do.

While slurping down noodles and simultaneously clicking through Instagram Stories, I came across Gigi Hadid’s “whatever’s in the fridge” salad recipe, which impressively resembles something I’d pay $16 for at Chopt. According to the new mom’s post, she got inspiration from fellow supermodel Devon Windsor, who’s no stranger to promoting deliciously healthy recipes on her YouTube page.

To create her salad, Hadid used arugula, seven whole grains with pine nuts, a Beyond Meat burger seasoned with Johnny’s Fine Foods Seasoning Salt, cherry tomatoes, feta cheese, Fresh Gourmet Crispy Onions, and chopped walnuts. She dressed the creation with a mixture of Brianna’s Salad Caeser, extra virgin olive oil, and balsamic vinegar, followed by a big drizzle of balsamic glaze. Hadid notes that she also likes to add salt and pepper.

If you’re rolling your eyes at the thought of a model sharing her salad recipe on social, let me share the moment I fell in love with Hadid. In January 2015, she told E! “Eat clean to stay fit, eat a burger to stay sane.” As much as the girl loves to eat healthy to maintain her model figure, she also indulges in burgers, McDonald’s, and, of course, her famous spicy vodka pasta.

Hadid frequently shares photos of her meals on social media. Another healthy one that caught our eye during the COVID-19 quarantine is her Sweetgreen Harvest Bowl recreation. She brought it to life using massaged kale, roasted chicken and butternut squash, cherry tomatoes, wild rice, goat cheese, sliced almonds, crispy onions, and balsamic vinegarette.
