Tao Group Hospitality’s CMO Pavan Pardasani expressed his excitement about expanding their offerings in Las Vegas and building the brand that is already a big hit in N.Y.C., where A-listers including Kim Kardashian, Justin Bieber and Machine Gun Kelly have been spotted.

“Since opening in 2019, Cathédrale NYC has been incredibly successful and a favorite amongst guests,” Pardasani tells GRAZIA USA. The ingredient-driven cuisine and stunning interiors were a perfect fit for the Vegas market, and we were excited to expand our relationship with Aria.”

Led by Tao Group Hospitality’s Chief Culinary Officer Ralph Scamardella and Executive Chef Jason Hall, Cathédrale’s elemental and ingredient-driven menu is a testament to their culinary expertise. The culinary team has carefully crafted a selection of signature dishes that reflect the restaurant’s Mediterranean roots. “The menu will be similar to the original location, but will have new items with Vegas flair,” Hall explains.

One such standout dish is the omelette, a delightful creation filled with crème fraîche and chives, topped with fingerling potato chips and exquisite Kaluga caviar. Seafood lovers will revel in the whole dover sole, prepared with lemon caper butter, and paired perfectly with Clos Ste Magdeleine Rosé.

For those with a penchant for indulgence, the 22-ounce prime aged ribeye with rotisserie leeks and sauce vert promises a truly remarkable dining experience. Tableside highlights include the salt baked Mediterranean sea bass served with rocket arugula, steamed potatoes and zesty Sorrento lemon. To conclude the meal on a sweet note, guests can savor the classic crêpes Suzette for two, accompanied by orange caramel and vanilla chantilly.

The culinary experience at Cathédrale is further enhanced by an extensive wine list featuring an array of exceptional choices. In addition, the restaurant boasts a creative twist on classic cocktails, such as the Quintessentia, which combines Maker’s Mark bourbon, Nonino amaro, lemon, blood orange and egg white, resulting in a harmonious blend of flavors. A favorite of Hall’s is The Quaternary, a tantalizing concoction of vodka, gin, vermouth and caviar.

“The drink menu features many inventive takes on classic cocktails, but my personal recommendation is The Quaternary with Ketel One vodka, Plymouth gin, Dolin dry vermouth, Castelvetrano olives and Kaluga caviar that’s served in an ice block,” says Hall.

Designed by the internationally acclaimed Rockwell Group, Cathédrale Las Vegas captivates guests with its remarkable ambiance. As visitors enter the restaurant, they are greeted by cascading blue velour drapery, unveiling a beautifully lit tunnel adorned with flickering candles and stunning carved artwork by the renowned artist Vhils. Moving into the lounge area, guests are welcomed by a striking sculptural metal beaded chain canopy, setting the stage for an extraordinary dining experience. Inside the main dining room, attention is drawn to a dramatic and monumental ceiling installation, providing a captivating focal point. The space is adorned with elegant blue leather banquettes, creating an inviting and sophisticated atmosphere.

“There is really no other restaurant like Cathédrale in Vegas,” says Pardasani. “The Mediterranean cuisine will really stand out to guests who are looking for dinner to be the focal point of their evening. Located just off the resort’s main lobby, Cathédrale Las Vegas is open from 5 p.m. to 10:30 p.m. on Sundays to Thursdays and from 5 p.m. to 11 p.m. on Fridays and Saturdays.
