This Las Vegas incarnation of Cath\u00e9drale pays homage to its flagship counterpart located in New York City&#8217;s vibrant East Village, capturing the essence of its legacy and DNA where guests embark on a gastronomic journey, offering a menu that celebrates coastal cuisine influenced by the flavors of France, Spain, Italy and Greece.<\/p>\n<p>Tao Group Hospitality&#8217;s CMO Pavan Pardasani expressed his excitement about expanding their offerings in Las Vegas and building the brand that is already a big hit in N.Y.C., where A-listers including Kim Kardashian, Justin Bieber and Machine Gun Kelly have been spotted.<\/p>\n<p>&#8220;Since opening in 2019, Cath\u00e9drale NYC has been incredibly successful and a favorite amongst guests,&#8221; Pardasani tells\u00a0<em>GRAZIA USA<\/em>. The ingredient-driven cuisine and stunning interiors were a perfect fit for the Vegas market, and we were excited to expand our relationship with Aria.&#8221;<\/p>\n<p>Led by Tao Group Hospitality&#8217;s Chief Culinary Officer Ralph Scamardella and Executive Chef Jason Hall, Cath\u00e9drale&#8217;s elemental and ingredient-driven menu is a testament to their culinary expertise. The culinary team has carefully crafted a selection of signature dishes that reflect the restaurant&#8217;s Mediterranean roots. &#8220;The menu will be similar to the original location, but will have new items with Vegas flair,&#8221; Hall explains.<\/p>\n<p>One such standout dish is the omelette, a delightful creation filled with cr\u00e8me fra\u00eeche and chives, topped with fingerling potato chips and exquisite Kaluga caviar. Tableside highlights include the salt baked Mediterranean sea bass served with rocket arugula, steamed potatoes and zesty Sorrento lemon. To conclude the meal on a sweet note, guests can savor the classic cr\u00eapes Suzette for two, accompanied by orange caramel and vanilla chantilly.<\/p>\n<p>The culinary experience at Cath\u00e9drale is further enhanced by an extensive wine list featuring an array of exceptional choices. In addition, the restaurant boasts a creative twist on classic cocktails, such as the Quintessentia, which combines Maker&#8217;s Mark bourbon, Nonino amaro, lemon, blood orange and egg white, resulting in a harmonious blend of flavors. A favorite of Hall&#8217;s is The Quaternary, a tantalizing concoction of vodka, gin, vermouth and caviar.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-77167\" src=\"https:\/\/graziamagazine.com\/us\/wp-content\/uploads\/sites\/15\/2023\/05\/230222_CDLV_AnthonyMair_The-Quaternary.jpg\" alt=\"\" width=\"1024\" height=\"760\" \/><\/p>\n<p>&#8220;The drink menu features many inventive takes on classic cocktails, but my personal recommendation is The Quaternary with Ketel One vodka, Plymouth gin, Dolin dry vermouth, Castelvetrano olives and Kaluga caviar that\u2019s served in an ice block,&#8221; says Hall.<\/p>\n<p>Designed by the internationally acclaimed Rockwell Group, Cath\u00e9drale Las Vegas captivates guests with its remarkable ambiance. As visitors enter the restaurant, they are greeted by cascading blue velour drapery, unveiling a beautifully lit tunnel adorned with flickering candles and stunning carved artwork by the renowned artist Vhils. Moving into the lounge area, guests are welcomed by a striking sculptural metal beaded chain canopy, setting the stage for an extraordinary dining experience. Inside the main dining room, attention is drawn to a dramatic and monumental ceiling installation, providing a captivating focal point. The space is adorned with elegant blue leather banquettes, creating an inviting and sophisticated atmosphere.<\/p>\n<p>&#8220;There is really no other restaurant like Cath\u00e9drale in Vegas,&#8221; says Pardasani. &#8220;The Mediterranean cuisine will really stand out to guests who are looking for dinner to be the focal point of their evening. The striking interiors are grand and exciting, and exactly what visitors are looking for when going out in Las Vegas.&#8221;<\/p>\n<p>Located just off the resort&#8217;s main lobby, Cath\u00e9drale Las Vegas is open from 5 p.m. to 10:30 p.m. on Sundays to Thursdays and from 5 p.m. to 11 p.m. on Fridays and Saturdays.
