It\u2019s cheap, neutral, and everywhere \u2014 so embedded in the food system that Americans now get <\/span><span style=\"font-weight: 400\">nearly 10% of their daily calories<\/span><span style=\"font-weight: 400\"> from it.<\/span><\/p>\n<p><span style=\"font-weight: 400\">That alone doesn\u2019t make it \u201cbad.\u201d But a <a href=\"https:\/\/news.ucr.edu\/articles\/2025\/11\/26\/study-links-americas-favorite-cooking-oil-obesity\" target=\"_blank\">new study from <\/a><\/span>UC Riverside<span style=\"font-weight: 400\">, published in the <\/span><i><span style=\"font-weight: 400\">Journal of Lipid Research<\/span><\/i><span style=\"font-weight: 400\">, is shining light on why our modern relationship with this oil may be out of sync with what our bodies evolved to handle.<\/span><\/p>\n<p><span style=\"font-weight: 400\">And the results are making the wellness world perk up.<\/span><\/p>\n<h2><b>The Study Everyone\u2019s Talking About<\/b><\/h2>\n<p><span style=\"font-weight: 400\">Here\u2019s what researchers did: they fed mice a <\/span>high-fat diet rich in soybean oil<span style=\"font-weight: 400\">. Most mice gained significant weight, consistent with nearly a decade of UC Riverside research showing soybean oil is more likely to drive weight gain than other fats like coconut oil.<\/span><\/p>\n<p><span style=\"font-weight: 400\">But one genetically engineered group of mice? <\/span><span style=\"font-weight: 400\">They <\/span><i><span style=\"font-weight: 400\">didn\u2019t<\/span><\/i><span style=\"font-weight: 400\"> gain the weight.<\/span><\/p>\n<p><span style=\"font-weight: 400\">They produced an alternate version of a liver protein called <\/span>HNF4\u03b1<span style=\"font-weight: 400\">, which regulates hundreds of genes related to <a href=\"https:\/\/graziamagazine.com\/us\/articles\/interval-walking-workout-burns-fast\/\">fat metabolism<\/a>. Humans also have two versions of this protein, and which version your body leans on can depend on age, genetics, stress, illness, and even medications.<\/span><\/p>\n<p><span style=\"font-weight: 400\">Translation: this might explain why two people can <a href=\"https:\/\/graziamagazine.com\/us\/articles\/chef-cracco-unfiltered-grazia-usa-fall-winter-2025\/\">eat the same foods<\/a> but have wildly different metabolic responses.<\/span><\/p>\n<h2><b>The Real Plot Twist: It\u2019s Not the Oil \u2014 It\u2019s What Your Body Turns It Into<\/b><\/h2>\n<p><span style=\"font-weight: 400\">The buzzy part of the study isn\u2019t about calories; it\u2019s about <\/span>biochemistry<span style=\"font-weight: 400\">.<\/span><\/p>\n<p><span style=\"font-weight: 400\">Soybean oil is high in <\/span>linoleic acid<span style=\"font-weight: 400\">, an omega-6 fatty acid also found in corn, sunflower, and safflower oils.
