Puntarena cumple un cuarto de siglo como uno de los proyectos gastron\u00f3micos m\u00e1s influyentes de la cocina del Pac\u00edfico mexicano, y lo hace reafirmando una filosof\u00eda que va m\u00e1s all\u00e1 del plato: cocinar desde la emoci\u00f3n, el origen y la experiencia compartida.<\/p>\n<p data-start=\"808\" data-end=\"1309\">Fundado en el a\u00f1o 2000 en Palmas, Ciudad de M\u00e9xico, Puntarena naci\u00f3 como una extensi\u00f3n natural del v\u00ednculo de Federico Rigoletti con el mar. La creaci\u00f3n de conceptos hermanos como Primos, Sobrinos y Torinos ampli\u00f3 el universo del grupo sin diluir su esencia. Cada espacio mantiene un hilo conductor claro: hospitalidad genuina, celebraci\u00f3n del producto y una atm\u00f3sfera donde la mesa se convierte en punto de encuentro.<\/p>\n<p data-start=\"2009\" data-end=\"2385\">La expansi\u00f3n internacional marc\u00f3 un nuevo cap\u00edtulo. En 2018, Puntarena cruz\u00f3 fronteras con su llegada a Madrid dentro de la Casa de M\u00e9xico, consolidando un di\u00e1logo cultural que hoy se materializa en Puntarena Ticui. Este proyecto no replica, interpreta.
