Elaborada con jam\u00f3n de bellota 100% ib\u00e9rico S\u00e1nchez Romero Carvajal, ha sorprendido a todo el jurado por su sabor, textura y equilibrio, adem\u00e1s de por su masa cremosa. El jam\u00f3n S\u00e1nchez Romero Carvajal estaba muy bien integrado y se percib\u00eda su textura y sabor en el bocado.\u00a0<em>\u201cEl secreto de nuestra\u00a0<span class=\"mark0d9la22nd\" data-markjs=\"true\" data-ogac=\"\" data-ogab=\"\" data-ogsc=\"\" data-ogsb=\"\">croqueta<\/span>\u00a0es, sobre todo el cari\u00f1o que le ponemos. Utilizamos leche fresca de vaca que infusionamos con los huesos el jam\u00f3n. En nuestra bechamel, usamos aceite de oliva, mantequilla, el jam\u00f3n marcado, la harina y la leche infusionada. Cortamos el jam\u00f3n en trozos peque\u00f1os pero lo suficiente para que se aprecie su sabor y textura. Boleamos nuestras\u00a0<span class=\"mark0d9la22nd\" data-markjs=\"true\" data-ogac=\"\" data-ogab=\"\" data-ogsc=\"\" data-ogsb=\"\">croqueta<\/span>s a mano una a una\u201d<\/em>, declaraba Carlos Griffo, ganador del concurso.<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/refresh-bee-production.s3.amazonaws.com\/beefree\/images\/ffcb403664abe0a3d6543d50670ecee5a33a02a5ab78d93e1d0f168fe08e429e\/editor_images\/2024\/01\/GANADOR.JPG\" \/><\/p>\n<p>La edici\u00f3n de 2024 ha batido r\u00e9cords de participaci\u00f3n. Con m\u00e1s de 70 recetas recibidas, Carlos Griffo ha recibido el t\u00edtulo como Campe\u00f3n a la Mejor\u00a0<span class=\"mark0d9la22nd\" data-markjs=\"true\" data-ogac=\"\" data-ogab=\"\" data-ogsc=\"\" data-ogsb=\"\">Croqueta<\/span>\u00a0de Jam\u00f3n S\u00e1nchez Romero Carvajal de Madrid Fusi\u00f3n 2024, junto con un jam\u00f3n S\u00e1nchez Romero Carvajal de 8-9 kg, un kit de corte completo y un viaje para dos personas a Jabugo para conocer el origen del jam\u00f3n.<\/p>\n<p>En el jurado de esta edici\u00f3n han destacado diferentes profesionales del sector de la gastronom\u00eda y del periodismo gastron\u00f3mico a nivel nacional e internacional como elchef Pedro Subijana (Akelarre, tres Estrellas Michelin),\u00a0Xanty El\u00edas (Finca Alfoliz, una Estrella Michelin), el cocinero afincado en el archipi\u00e9lago del mar Glacial \u00c1rtico Alberto Lozano (restaurante Huset), Jeferson Gac\u00eda (restaurante Oda en Bogot\u00e1),\u00a0 Chele Gonz\u00e1lez- Chef del a\u00f1o 2023, seg\u00fan Tatler Dining Filippines ( restaurante Galery by Chele, mejor restaurante de Filipinas en 2016 y 2017 seg\u00fan 50 Best Restaurants) , el periodista
